This is probably the quickest sandwich i have ever made. Easy, healthy and just a matter of assembling your favorite ingredients together. This is perfect to make for breakfast, lunch even as a snack depending on your hunger 🙂 . It is fully vegan and meat, dairy-free. I made this for my vegetarian husband and he loved it. It taste’s good and very filling. Let’s make some sandwiches shall we.

Ingredients: 

Vegan ham slice – 3 to 4 slices

Vegan cheese (Shredded / Slice) – as required

White / Wheat Bread – 4 slices

Red / white onion – 1/2 (Sliced half/round and thin)

Tomato – 1 (Sliced round and thin)

Vegan butter – 1-2 tablespoon

Salt – To sprinkle (optional)

Cooking time: 5 – 7 mins

Serves: 2 people

Start by the assembling the sandwich. Place some cheese on first bread slice, put the tofurky deli slices on top of the cheese. Add onions and tomatoes over the of deli slice. Sprinkle some sea salt optionally or even some black pepper. Add bit more of cheese on top of all the layers, finally finish with the other bread slice. The cheese on either side will act as binding agent and keep the sandwich intact as it melts.  Also this helps the cheese to melt easier. Optionally you could add ketchup, mustard, siracha, vegan mayo or tartar , some greens, cucumber or any other veggies. It really depends on your personal taste and what are the ingredients easily available to you. Heat some vegan butter on skillet and place your sandwich on the pan. Let it cook on slow heat for couple of minutes, each side , i also added butter on the other side of sandwich before flipping it over. This ensures a crisp bread and nicely melted cheese on both sides. Serve the sandwich with a side of salad, fries, chips or anything you like. Repeat the same process and make more of these 🙂 .

I used Tofurky deli slices (oven roasted) and Daiya Cheddar style shreds for this recipe. Both i shopped form “Four seasons organic market” at “Great world city” mall here in Singapore. You can also use any other brands or varieties that you prefer.
